by Danish brewmaster, Gilbert Bjorn Nielson, Cervecería Calavera is pleased to
turn tradition upside down. Educated in Mexico, but with chemical engineering
studies in his native country, Nielson brews beer that blends the traditions of
both countries. Their Mexican Imperial Stout beer is a smooth dark beer that
tastes and smells of chocolate and coffee, with the added surprise of a hint of
chili, both of which are added near the end. Stout beer is Calavera's signature
beer, accounting for almost 40% of the company's sales.
